Ice cream is a frozen dish made sweet by adding sweeteners. It can be taken as a snack or a dessert. The raw ingredients of making ice cream can either be cream or dairy milk and cashew milk for the vegans. In addition to these, it is flavored with a sweetener. The basic process is typically the same distinguished by the different types of flavors used. The flavors range from vanilla, lavender, strawberry, ginger, raspberry and watermelon just to name a few.
In our case, we will focus on creamy vegan ice cream. Outlined below is the home-based process of making delicious vegan ice cream with and without a ice cream machine.
What you require to get started
- Coconut milk
- Cashew milk
- Cocoa butter
- Coconut oil
Have a bowl half full of cashew nuts and soak them overnight. The next day you will notice that the cashews have become soggy and the color of the water whitened.
Fine blend the cashew nuts and then sieve to remove the hard outer cover then add two cups full of coconut milk into the cashew milk and stir to mix.
With the mixture of coconut milk and cashew milk ready, then its time to sauce it up with simple syrup. Add a cup of water into a pan and a bit of sugar then heat to dissolve the sugar then add cocoa butter and coconut oil into the solution. The cocoa butter will help it to stay fairly solid while the coconut oil will give it the required liquid state. Try to balance the coconut oil and cocoa butter quantities to avoid getting the undesired state of the ice cream. Point to note is that you should ensure that you do not add too much cocoa butter to avoid spoiling the taste of the end product.
Add the syrup to the cashew milk, coconut milk mixture and fine blend it further. Under low heat, stir the base of your ice cream using a whisker or a spatula.
At this stage of the process is when to add the required flavor into the base. Chill the cream for 1 to 2 hours then churn it to make it denser. Make sure not to fill the ice cream machine because when it freezes it will expand. You will then freeze the churned cream for 24 hours. The process of churning is where an ice cream machine comes in handy where without it you can place the ice cream base directly into a freezer and in every 10 minutes, you will have to stir it. When it thickens that’s when to add your ice cream flavor. The only issue of not using an ice cream machine is the formation of ice crystals because it is not constantly churned making it to lack the traditional ice cream texture.
